Chocolate Chip Mint Vegan Delight

It is very hard to believe I used to be a veggie-phobe. I didn’t eat them, in fact, I didn’t even come near them. Even as a child, my poor, dear mom played long and hard the battle with the kid who refused to eat her vegetables.

Today, it is the backbone of my nutrition. And I am always seeking new ways of incorporating them into my daily diet. When I stumbled across this recipe on the interwebs, my heart skipped a beat. Could this really taste as good as it looks? For certain, it was worth a try.

The original recipe comes from Pamela Salzman, and of course, her photos look much better than mine! My recipe isn’t much different, but I did adjust it for just one serving and changed a few ingredients up.

This shake is Da Baum  No fooling. Just a word of caution…if you are not used to eating a lot of veggies at once, ease your way into this one. It’ll make you a little gurgly in the lower regions, if you get my drift. I also might add, the shake turns out to be a lovely shade of…dare I say it…neon green!

For this delicious glass of healthiness, you’ll need the following:

  • 1 cup non-dairy milk of choice. (I use a 1/2 cup water to 1/2 cup milk ratio. You can choose to use all milk, if you like.)
  • 2 generous cups of fresh spinach
  • 1 half banana
  • 1/4 avocado
  • 4-5 pitted dates (There are many kinds out there. The Medjool dates are the sweetest. I tend to just get the California pitted dates, which I find are not as sweet)
  • 1/4 tsp. pure mint extract
  • 1/2 tsp. pure vanilla extract
  • 2 Tbls. extra dark cocoa chips or cocoa nibs.
  • 1 cup ice cubes

Recipe Note: Right now, I’m really into Blue Diamond’s Blended Coconut/Almond Milk. It is really delish and combines the best of both worlds. Plus, it makes for extra creamy results.

Directions:

If you don’t already have a great blender, get one. Vitamix makes the best. You can use a regular blender, but you don’t want to put all the ingredients in at once. Start with the wet, and slowly add everything except the chips, leaving the spinach for last.

Start with the wet ingredients

  1. If you have a Vitamix, start with the wet ingredients and layer until you get to the spinach:
  2. Milk, water, ice, banana (I freeze mine), dates, extracts, avocado, and finally spinach. Don’t add the chips until later.
  3. Blend all ingredients until smooth. Finally, add in the chips and blend for just a few seconds.

Pour into a glass and enjoy! You can garnish this with extra chips, or even a mint leaf if you are so inclined!

I wouldn’t have believed it if I hadn’t tried it for myself. I was so excited to make this for the family the following day for breakfast. Only one was fooled, but she saw the spinach on the counter. Bummer…because I think if it wasn’t in her mind, she wouldn’t have tasted it. Everyone else rated in an enthusiastic” Thumbs Up”!

This has become a staple for me. I alternate it with my Shakeology for a great post workout pick-me-up. If you try it, let me know what you think!

    This sounds really good! I love green smoothies. The one I make has banana, blueberries, spinach, almond milk, almond butter, and chia seeds. Love the idea of mint and chocolate chips…will try this one!
