Not too long ago, I expressed my deep emotional love for butter. I’m not sure what it is about it that I love so much…it’s buttery color, it’s buttery richness, it’s buttery texture, it’s buttery flavor. Heck, it’s just BUTTER. What could be better?

Since going gluten free, however, finding stuff to pat my butter on gets harder and harder. So hard, in fact, I opened the question up to Social Media and was inundated with solutions. This one, however, intrigued me.

Mandie Cole, over at Mandie Cole’s Ageless Fitness, puts together her own little recipe and product that she calls “Protein Pods”. Not only are they super easy to prepare, but they are delicious and GLUTEN FREE! Plus, they are full of protein, high in Omega-3 essential fatty acids, fiber and Vitamin E, and they are LOW CARB, which is crucial for me right now in my effort to fuel my runs in a state of ketosis. Here are the ingredients: Almond meal, low-sugar protein powder, hemp hearts, chia seeds, flax seeds, flax seed meal, unsweetened coconut flakes (measured to precise quantities to ensure a consistently delicious result).

But you know what the best thing is? You can SLATHER THEM IN BUTTER. I can’t tell you how happy this made me! Mandie was ever so kind to share a sample with me. And I can do nothing but brag about them.

Here’s what you get. Two super cute pods of a pre-mixed protein loaded “muffin” dough. You make it in a coffee mug! It’s very similar to a mug muffin. Each pod is one serving, although I spread it out and ate it throughout the day. I had to hide it from my husband however, because he kept helping himself to my protein pod. Now, you KNOW it has to be good, if my husband likes it. Take it from me! Typically, he turns his nose up at anything Gluten Free. But he enjoyed these immensely!

If you have never made a mug muffin before, it is really simple to do. Mix all your wet ingredients in a microwavable mug and whisk with a fork. Then add in your dry ingredients. Mix well, and microwave as specified.

I used a wider, deeper mug to get a larger, flatter surface to so that my butter could actually gather in puddles if possible.

When it was done, I was so impatient, I clawed it out of the mug. You might want to put a little spray on the bottom of yours to keep it from sticking. But I turned it out onto a paper plate. So CUTE and simple!

The taste? Slightly sweet, slightly coconutty, slightly chewy, but mostly amazing. You could even put some almond butter and fresh fruit on it for a real treat. Or imagine…slicing it in half lengthwise and filling with bacon and eggs. OK…now I’m getting excited. I must order more of these!
