Sometimes I stumble upon something so amazing, I must pat myself on the back. This recipe kind of came together on a whim. White Chicken Chili has always been a favorite, but add in the beans, and the white (or brown) rice, and suddenly you’ve also added an unnecessary sugar rush. In my quest to continue the low carb/high fat lifestyle and share the health with the rest of the family, I had an idea to fit this recipe back into the rotation.

The chicken part? That is easy! Rotisserie chickens cut the prep time in half. I make it a habit to pick one up from the local Costco or Sam’s Club when I’m running errands. Even Walmart SuperCenter makes a decent rotisserie chicken, in a pinch. But the ones that come from the former are the best value for the buck.

Now that we are eating low carb/high fat, there is no reason to just buy chicken breasts. An entire chicken, dark meat and all, fits the WOE nicely. What I’ll do, however, is remove the skin, and save it for myself as a treat later in the week. I either heat it in the microwave, or fry it up in coconut oil for a crispy potato chip alternative.

Time Savers - Rotisserie Chicken

Taking all the chicken off the bones can be time consuming, but it is worth not having to cut up raw chicken for this dish. Of course, that can still work, just be sure to take all the proper precautions when working with raw chicken, yada yada yada. And make sure it is cooked through before you eat it.

This recipe uses cooked chicken. So just precook your chicken first if you wish to start from scratch.

To substitute for the consistency of the beans, I used cauliflower. Cauliflower is a low carb/high fat eaters best friend. You will find so many uses for it. And it can easily substitute for potatoes, corn, beans, and even rice!

You will also need Miracle Noodle Shirataki Pasta to make this extra special. You could leave it out, but I feel it adds to the heartiness of the chili.

To prepare cauliflower: Chop it into small pieces. Steam microwave in a Pyrex glass pan with 1 cup water for 8 minutes on high, then drain.

I served this along side  a green salad and oven roasted broccoli.

After I prepared it, I got the idea to toss in some fresh chopped Kale…a bit too late, but I’ll try it next time for some added fiber and nutrition! If you try it, feel free to make it your own. Fresh spinach or kale would make a great addition!

I was hoping for leftovers with this dish, but unfortunately (or fortunately) there were none. So this fed a hungry family of four! And I had to sneak this last helping off to snap the photo before it was devoured by my husband.

So, using a few simple replacements, even your most cherished recipes can fit a #keto #lowcarb lifestyle.
