Miracle Noodle Crock Pot Chicken Stew

I love crock pots. Especially on those days where I actually have the opportunity to get out of the house. It doesn’t happen often, but when it does, I rely on them. The alternative to a healthy crock pot dinner for my family is my husband saying,

“Oh, don’t bother. I’ll just run out and get us something from Walmart.”

“Um, what about NOOOOOOO,” (in my best Dr. Evil impression).

Coming up with new and exciting crock pot recipes can be challenging, especially when you are trying to cut out the carbs from the diets of your immediate family members. So, many stews come off of that list due to the addition of potatos, carrots, corn, flour, etc. But this recipe actually came together after realizing that I had some chicken thighs on hand, and a half head of cauliflower…plus some kale that needed to be used up. To beef it up a little, I incorporated Miracle Noodle Rice into the mix. Perfection! And low carb to boot.

Ingredients

Instructions
  1. Place sliced onions, garlic, and chicken broth into a crock pot. Set it to low or to desired cook time.
  2. Heat 1 Tbls oil in a skillet until shimmery. Season chicken thighs with salt and pepper. Add chicken thighs to skillet in batches of 4 and brown on both sides. (Can skip this step if short on time).
  3. Place chicken thighs in crockpot.
  4. Add remaining oil into skillet. Quickly saute and brown the cauliflower. Add to crockpot with skillet bits and the oil. Add cumin, chili powder, cayenne pepper, salt and black pepper. Stir gently to coat chicken and vegetables.
  5. Allow to simmer for a few hours.
  6. An hour before serving, add cilantro, spinach, kale, and green chilies to crock pot. Stir gently.
  7. 10 minutes before serving, add Miracle Noodles Rice. Stir to incorporate.

  8. Serve with sour cream and shredded cheese if desired.
Recipe Notes

To prepare Miracle Noodle Rice, rinse well and drain. Microwave it on high power for 3 minutes, then rinse and drain again. Press out excess moisture using a clean towel or allow to drain while preparing dish.

    YUM!!! I need to try this out!

  2. We very rarely do takeout, maybe a few times a month? I just spent this past weekend creating freezer meals so I can just pull out of the freezer, let defrost all day and then cook…not even having to think about it. It’s worked wonders for us. I definitely need to use my crockpot more though!
