Purely Inspired Lemon Pound Cake – #FACLW

If you missed it last week, I reviewed Purely Inspired Nutrition’s Protein Powders and I promised you a new recipe this week using their Natural Vanilla flavored protein powder. This recipe is a gem, and well liked by everyone, including the finicky kids. The fun thing about it is that you can make it your own just by changing out the flavor of extract you use in the final product. I chose lemon because it is such a refreshing change from the berries or chocolate that I’m always incorporating into my baking. In the back of my mind, I’m thinking coconut extract, orange extract, or even maple extract might make for some interesting tastes. Consider rum or a teaspoon of brandy and make it a nice dessert cake for the older crowd. As always, feel free to play around with it!

Instructions
  1. In a bowl, mix the first five ingredients. Set aside.
  2. In a separate mixing bowl, add the three whole eggs, two egg yolks, coconut oil, butter, and extracts. Mix until well combined. A stand mixer or hand mixer is recommended.
  3. Add the remaining egg whites and mix on high for an additional 3-4 minutes.
  4. Pour batter into a two silicone mini loaf pans, or a parchement paper lined 8 inch cake pan.
  5. Bake at 350° for 30-35 minutes or until a toothpick comes out clean.
  6. Allow to cool before removing from pan and placing on a rack.
  7. Top with a powdered sugar substitute if desired.
