Purely Inspired Strawberry Donuts – #FACLW

I’m so excited that Purely Inspired read my original review of their protein powders and kindly sent me a canister of their Very Berry flavor! I knew it was deliverd while I was on vacation in California, so I couldn’t wait to get home and try it. Berry flavored protein powders aren’t my favorite. I’ll admit that. But, with a little creativity, you can sure come up with some great ideas on how to utilize it…especially when it comes to no-guilt desserts.

I love to develop new recipes. Some of it ends up in the trash (actually, my husband still eats most of my mistakes), but most of the time, I can get it correct on the first try. This one took 2. My first batch didn’t come up light and fluffy like I had hoped. I added baking soda, and just a smidgen of apple cider vinegar to give it a little lift. At just 122 calories, you can have your donut…and eat it, too! Low carb, high protein, and no sugar. Can it get any better than that?

Instructions
Donuts
  1. Preheat oven to 325°. Grease 4 wells of a donut pan with coconut oil.
  2. Blend eggs, vanilla, vinegar, and coconut milk.
  3. Add coconut flour, almond flour, baking soda, and Purely Inspired 100% Plant Based Very Berry Protein. Mix well until combined.
  4. Gently stir in chopped strawberries.
  5. Divide batter evenly into 4 wells of donut pan.
  6. Bake at 325° for 20 minutes or until just golden.

Icing
  1. Soften cream cheese in microwave for 15 seconds.
  2. Add coconut milk, powdered sugar, vanilla and coconut oil and stir well.
  3. Spoon into a sandwich bag, clip the corner, and squeeze onto donuts.
  4. Don't care for icing? Leave 'em plain!
