I love pig. Well, I love pork. Actually, I love pig BUTTS…and I cannot lie.

One of my favorite foods from my former life as a carbie was authentic Cuban sandwiches. I lived in Florida for 6 years, and in that time, I consumed the best of the best. Unfortunately, I could never replicate them, no matter how hard I tried. Perhaps that is because I’m not Cuban.

Now that I’m a low carber, I’ve given up my quest to make the perfect Cuban sandwich. That doesn’t mean, however, I still can’t develop the flavor in other dishes. One of my best side dishes to date plays along with the smoked pork shoulder that I make on my Traeger smoker. And the bet part is, it is very low in calories and carbs. So you can have your Cuban sandwich…minus the bread, of course…and eat it, too! This recipe was chosen by Miracle Noodles as a featured recipe. Try it and see what you think!

I Like Pig Butts and I cannot lie.

The more and more I read about the LCHF (low carb high fat) lifestyle, the more I know it was made for me. And, the more I know it is right for my family. They may not agree. In fact, I know there is a lot of cheating going on outside the home. But, if I can provide the majority of their nourishment everyday, then I know I’m headed in the right direction. I can only hope that when they are willing, they will make the correct decision on their own.

In the meantime, I create. I bake, sauté, cook, freeze, broil, and grill. I make mistakes, I toss it out. I succeed and I reap the rewards of very satisfied bellies.

Sometimes the easiest recipes are the hardest to put together. For instance, I like to serve heart healthy fish once a week. Since we don’t do rice and potatoes anymore, this can be a challenge. The family is getting a little tired of mock-potato salad and no-sugar cole slaw, despite the fact that they are both popular dishes around here. This one came together while trying to develop a deli style macaroni salad with a cuban twist to match my smoked pork. The trade off? Miracle Noodle Ziti for the macaroni. Suddenly, a lightbulb moment and a great cuban inspired recipe.

Serve this one with fish as I do, or along side burgers and brats. Or serve it with pulled pork on low carb tortillas. I promise, it will be an instant hit!

Having mastered the mock potato salad using cauliflower, it was time to move on to the macaroni salad using Miracle Noodles. This turned out amazing on the first try. To prepare Miracle Noodle Ziti, rinse well and drain. Microwave it on high power for 3 minutes, then rinse and drain again. Press out excess moisture using a clean towel or allow to drain while preparing dish.
