I've made this recipe, successfully, mixing by hand. But by far, you'll come out with a better result using a heavy duty blender or food processor. Chia seeds don't break down unless they are blended well. I find the seeds easily get trapped between my teeth if I don't prepare the batter using my VitaMix.
