Pancakes. You love ’em. You hate ’em…because they are unhealthy blood sugar spikers in the worst way.

But you just GOTTA have them.

My kids miss pancakes. I feel like a neglectful mom by not allowing them to have them anymore. Well, I shouldn’t say anymore. I do allow them once in a while, but if it were up to them, they’d have them 3x a week. And I gotta say no.

But give me some Purely Inspired Protein Powder and a few other ingredients, and suddenly we are having pancakes…and eating them, too. A few failed attempts at these, but I think I finally got the recipe down. They are best fresh. But you can save them and re-heat for later. Just be sure to add lots of heart healthy grass fed butter. Syrup isn’t necessary. They are sweet enough as it is. But a little fresh fruit might help out the sweet teeth in the family.
