Ahhhh! The deli-counter. It is a place I used to take for granted. Back when I was a child, the deli-counter held such magic! Growing up in Nassau County on Long Island meant the only kind of deli-meats available were Boar’s Head brand. They were premium style deli meats, and they still are. In fact, when the finally came to Minnesota, I rejoiced! It was a taste of “home” here in the upper midwest. I didn’t care how far I had to drive, or how much I had to pay. It was Boar’s Head, after all.

The other magical item at New York deli’s were the salads. “Made Fresh Daily” is what the sign read. That, of course, was a bonus. But this was back in the day where they actually were made fresh daily. There was no need for added sugars, preservatives, or MSG because at the end of the day, they were gone.

These days, you haven’t got a clue what is in those salads, or how long they have been sitting there. Although, you can usually tell by the slight discoloration in the dried out upper most layer of the salad bowl. Gross.

Besides, cutting pasta out of the lives of myself and my family means the deli-salads are off limits. But there can be healthy alternatives. And some of them prove themselves to be much better than the original.

Instructions
  1. Prepare Miracle Noodles. Rinse in cold water, microwave for 2 minutes. Rinse in cold water again and allow to cool in strainer. Press out additional moisture with a paper towel or place in a dry frying pan and saute over medium heat for about 5 minutes or until no longer shiny.

  2. Mix mayonnaise, sour cream, mustard, vinegar, sweetener, salt and pepper in a bowl or measuring cup.
  3. Place diced vegetables in a larger bowl.

  4. Add cooled Miracle Noodles to diced vegetables.
  5. Pour sauce over the veggies and noodles and gently stir to combine.
  6. Refrigerate for an hour to allow flavors to meld.
