#FACLW – Miracle Noodle Jalapeño Cheese Casserole/Dip #Recipe

Sometimes I pat myself on the back for coming up with the most perfect dish that the entire family devours. This is especially pleasing when one of my children dislikes a few of the ingredients. I’m always grateful that their sense of adventure doesn’t keep them from even trying a new dish. In fact, with just one little taste of this one, my daughter, who doesn’t care for Jalapeños OR bacon (is she, in fact, MY child? If she didn’t have an identical twin, I’d suspect she was switched at birth), will eat an entire bowl of this at one sitting. Actually, so would I. I have even considered, on several occasions, making a recipe for myself …yes…just for me…for dinner. It is that gosh darn good.

The great thing about this recipe is it can stand alone as a side dish to almost any entree, or it can double as a dip for fresh veggies or gluten free chips. You can change it up, too. Sometimes I use chopped shrimp instead of bacon. Sometimes I use both. And I summize that some crab meat would be amazing in this as well! The trick to keeping the heat in it down is to remove all the seeds and the ribs of the Jalapeños. If you want it a bit more spicy, just leave some in!

It is so easy, and requires little preparation. I’m sure you’ll love it as much as we do!
