#FACLW – Miracle Noodle Ambrosia #Recipe

When I was a kid, my mom used to make this amazing, sweet, dessert salad that she’d bring to picnics, cook outs, family gatherings, what have you.

It was my ultimate favorite.

She taught me how to make it when I was about 8 years old because you didn’t need to cook anything. You just needed to open a few cans of fruit and measure out simple ingredients. The dish was called Ambrosia, or One Cup Salad, since basically, you used one cup of each of the ingredients.

What made the salad sweet was the addition of mini marshmallows. But instead, to make this low sugar and low carb, I substituted Miracle Noodle Rice and Zylitol, plus a little stevia for the marshmallows. And instead of sugar ladened, canned, mandarin oranges and pineapple, I used some fresh berries as a topper. I also substituted unsweetened coconut for the sweetened version.

The key to this recipe is to let the mix meld in the refrigerator for as long as you can. Overnight is best. The sugar almost ferments into the sour cream making a delectable concoction. It may look a little bubbly when you first remove it from the refrigerator. Simply stir it up before serving.

It turned out as delicious as I remember. But SO much healthier!

Instructions
  1. Prepare Miracle Noodle Rice. Rinse, drain, then microwave for 2 minutes on high. Drain again. Spread on a plate to cool.
  2. Mix the sour cream, sweeteners and coconut in a mixing bowl.
  3. Add the cooled Miracle Noodle Rice. Stir well.
  4. Allow to sit and meld in the fridge for a few hours or overnight (best).
  5. Remove from fridge, stir. Spoon into bowls and top with fresh berries.
