#FACLW – Miracle Noodle Ambrosia #Recipe

When I was a kid, my mom used to make this amazing, sweet, dessert salad that she’d bring to picnics, cook outs, family gatherings, what have you.

It was my ultimate favorite.

She taught me how to make it when I was about 8 years old because you didn’t need to cook anything. You just needed to open a few cans of fruit and measure out simple ingredients. The dish was called Ambrosia, or One Cup Salad, since basically, you used one cup of each of the ingredients.

Sometimes I pat myself on the back for coming up with the most perfect dish that the entire family devours. This is especially pleasing when one of my children dislikes a few of the ingredients. I’m always grateful that their sense of adventure doesn’t keep them from even trying a new dish. In fact, with just one little taste of this one, my daughter, who doesn’t care for Jalapeños OR bacon (is she, in fact, MY child? If she didn’t have an identical twin, I’d suspect she was switched at birth), will eat an entire bowl of this at one sitting. Actually, so would I. I have even considered, on several occasions, making a recipe for myself …yes…just for me…for dinner. It is that gosh darn good.

Ahhhh! The deli-counter. It is a place I used to take for granted. Back when I was a child, the deli-counter held such magic! Growing up in Nassau County on Long Island meant the only kind of deli-meats available were Boar’s Head brand. They were premium style deli meats, and they still are. In fact, when the finally came to Minnesota, I rejoiced! It was a taste of “home” here in the upper midwest. I didn’t care how far I had to drive, or how much I had to pay. It was Boar’s Head, after all.

Yesterday was Chocolate Chip Cookie Day. Who knew? Since when does a chocolate chip cookie get it’s own “day”?

I don’t indulge in sugar, so for me, this is as insignificant as doughnut day. Blech. Don’t need ’em, don’t want ’em.

But a chocolate chip cookie? That might be nice, if I could figure out how to make it sugar free and healthy. And since you usually can’t eat just one, being able to make just a smackerel would be plus.

Pancakes. You love ’em. You hate ’em…because they are unhealthy blood sugar spikers in the worst way.

But you just GOTTA have them.

My kids miss pancakes. I feel like a neglectful mom by not allowing them to have them anymore. Well, I shouldn’t say anymore. I do allow them once in a while, but if it were up to them, they’d have them 3x a week. And I gotta say no.
