Instructions
  1. Prepare Miracle Noodle Rice. Rinse, drain, then microwave for 2 minutes on high. Drain again. Spread on a plate to cool.
  2. Mix the sour cream, sweeteners and coconut in a mixing bowl.
  3. Add the cooled Miracle Noodle Rice. Stir well.
  4. Allow to sit and meld in the fridge for a few hours or overnight (best).
  5. Remove from fridge, stir. Spoon into bowls and top with fresh berries.

Instructions
  1. Prepare Miracle Noodles. Rinse in cold water, microwave for 2 minutes. Rinse in cold water again and allow to cool in strainer. Press out additional moisture with a paper towel or place in a dry frying pan and saute over medium heat for about 5 minutes or until no longer shiny.

  2. Mix mayonnaise, sour cream, mustard, vinegar, sweetener, salt and pepper in a bowl or measuring cup.
  3. Place diced vegetables in a larger bowl.

  4. Add cooled Miracle Noodles to diced vegetables.
  5. Pour sauce over the veggies and noodles and gently stir to combine.
  6. Refrigerate for an hour to allow flavors to meld.
