Instructions
  1. Prepare Miracle Noodle Rice. Rinse, drain, then microwave for 2 minutes on high. Drain again. Spread on a plate to cool.
  2. Mix the sour cream, sweeteners and coconut in a mixing bowl.
  3. Add the cooled Miracle Noodle Rice. Stir well.
  4. Allow to sit and meld in the fridge for a few hours or overnight (best).
  5. Remove from fridge, stir. Spoon into bowls and top with fresh berries.

Instructions
  1. Prepare Miracle Noodles. Rinse in cold water, microwave for 2 minutes. Rinse in cold water again and allow to cool in strainer. Press out additional moisture with a paper towel. Set aside.
  2. Combine lime juice, fish oil, and zylitol. Stir until sweetener is dissolved (warm for 30 seconds in microwave if necessary to dissolve sweetener).
  3. Heat half the oil in a skillet over medium heat until shimmery. If pork is uncooked or if you are using ground pork, add to skillet and stir fry until almost cooked through. Remove from skillet and set aside. Add remaining oil to pan. Add all onions and the diced pepper to the skillet and stir fry until the onions begin to soften and wilt (about 5 minutes).
  4. Add pork to skillet with onion mixture, and heat cooked port until it sizzles with the onions (about 3-4 minutes).
  5. Add Miracle Noodles to skillet. Combine all ingredients. Heat through for about 2 minutes.
  6. Pour juice mixture over skillet ingredients. Heat for another 2 minutes or so.
  7. Turn off heat. Add mint and Cilantro and toss with skillet ingredients. Sprinkle with chopped peanuts, or leave in a separate bowl for individual servings.

Recipe Notes

To prepare Miracle Noodle Fettuccini, rinse well and drain. Microwave it on high power for 3 minutes, then rinse and drain again. Press out excess moisture using a clean towel or allow to drain while preparing dish.

I've made this recipe, successfully, mixing by hand. But by far, you'll come out with a better result using a heavy duty blender or food processor. Chia seeds don't break down unless they are blended well. I find the seeds easily get trapped between my teeth if I don't prepare the batter using my VitaMix.

I think one of the most tempting items for my family at the deli counter is the home made salads behind the glass. Potato salad and macaroni salad, especially. Having mastered the mock potato salad using cauliflower, it was time to move on to the macaroni salad using Miracle Noodles. This turned out amazing on the first try. Pair it with any kind of fish, or with burgers and brats!

Instructions
  1. In a bowl, mix the first five ingredients. Set aside.
  2. In a separate mixing bowl, add the three whole eggs, two egg yolks, coconut oil, butter, and extracts. Mix until well combined. A stand mixer or hand mixer is recommended.
  3. Add the remaining egg whites and mix on high for an additional 3-4 minutes.
  4. Pour batter into a two silicone mini loaf pans, or a parchement paper lined 8 inch cake pan.
  5. Bake at 350° for 30-35 minutes or until a toothpick comes out clean.
  6. Allow to cool before removing from pan and placing on a rack.
  7. Top with a powdered sugar substitute if desired.
